The salt produced and packaged in the Cervia salt pan is an integral, raw, high quality salt, that is a salt that has undergone only physical and mechanical processing, corresponding to a careful selection, washing with water with a high salt concentration and then separation. water up to a maximum humidity of 2%. It is recognized as a special, "sweet" salt, due to the purity of sodium chloride and the absence of other, more bitter salts, normally contained in sea water. In the fifties of the twentieth century the ownership of the salt pans passed to the State Monopolies, who transformed the approximately two hundred salt basins, with multiple collection, into a single large body of water, according to the so-called "French" method, where the collection began to be carried out only once a year and with mechanical means.
